Shaved Fennel and Parmesan Salad

Easy, healthy, and delicious salad which makes the perfect pairing with a fish or meat dish. To make this salad vegetarian, simply replace the Parmesan with a vegetarian cheese of your choice. Alternatively, remove it entirely for a vegan option! 

Serves 4

INGREDIENTS

  • Arugula
  • Fennel Bulb
  • Fresh Dill
  • 2 tbsp Olive Oil
  • Parmesan
  • 1 Lemon
  • Salt
  • Pepper

INSTRUCTIONS

  1. Thinly slice the fennel bulb
  2. Combine the arugula, fresh dill, and shaved fennel in a serving bowl
  3. Grate 1 teaspoon of lemon zest
  4. Squeeze the lemon into a small bowl
  5. Combine lemon juice, zest, salt, and pepper
  6. Pour the dressing over the salad and toss to combine
  7. Shave a few slices of Parmesan on top of the salad
