Lemon Thyme Iced Tea

Surviving this intense summer heatwave requires staying hydrated. Try your hand at a refreshing batch of homemade iced tea, it's certainly far more fun than tap water. This recipe requires no sweetener whatsoever as the lemon and cinnamon really dominate the flavour. 

Serves 4

INGREDIENTS

  • 4 Cups Water

  • 3 Lemons (1 for garnish)

  • 5 Sprigs of Fresh Thyme (extra for garnish)

  • 1 Cinnamon Stick

  • 3 Earl Grey Tea Bags

INSTRUCTIONS

  1. Bring water to a boil in a saucepan while juicing two of the lemons into the pan.

  2. Using a zester or paring knife, gently slice the skin from the lemons and add to the water.

  3. Throw in the fresh thyme and cinnamon sticks.

  4. Once the water is boiling, remove saucepan from the heat source and add the tea bags.

  5. Allow to steep for fifteen minutes.

  6. Remove the tea bags and allow to cool completely for approximately one hour.

  7. Sift the tea through a fine mesh strainer to catch any remaining lemon pulp or seeds.

  8. Serve over ice with a few slices of lemon in each glass.
