Black Bean Burger

At first glance, this burger could fool a carnivore. These patties stay together better than any other vegan burger we’ve tried, without needing any flour. The trick is to leave the mixture in the freezer for half an hour before frying. The main ingredients in this burger promote heart health and weight control thanks to powerful antioxidants. Walnuts also contain a large amount of omega-3 fatty acid, making them an important addition to vegan cuisine.

4 Burgers

INGREDIENTS

  • 1.75 Cups Black Beans (1 Can/425grams)

  • 1 Yellow Onion

  • 1 Cup Walnuts

  • 1 tbsp Olive Oil

  • Seasoning: Paprika, Cumin, Onion Powder, Salt and Pepper

INSTRUCTIONS

  1. Preheat the oven to 175ºC (350ºF).

  2. Finely chop the onion and fry in cooking oil until softened.

  3. Meanwhile crush the walnuts using a food processor, or go old school with a mortar and pestle.

  4. Add all the ingredients, including the softened onion, to your food processor and blend until smooth (you can also mash the mixture by hand).

  5. Form mixture into four balls of equal size and flatten them slightly to form patties.

  6. Line a baking tray with parchment paper and lay your burgers on the sheet.

  7. Place in the freezer for 15 minutes allowing the mixture to firm up slightly. (This waiting period is a great time to prep your sides and toppings; we recommend burger buns, sliced tomatoes, guacamole, and sweet potato wedges)

  8. Bake for 10 minutes, then flip each burger and bake for an additional 10 minutes.
